Snack – 1 cup of strawberries (yes, before breakfast snack…)
Breakfast – 2 eggs, 3 cups of veggies. Zucchini, asparagus, tomatoes, onions, avocado
Snack – tea with honey
Lunch – Smoothie with 3 cups fruit/veggies. Cucumbers, cauliflower leaves, romaine lettuce, strawberries, blueberries, pineapple core, coconut milk, vanilla
Snack – Soy yogurt
Dinner – Salad with 3 cups veggies, tahini lemon dressing and 3 oz chicken breast. Romaine lettuce, cucumbers, zucchini, tomatoes, avocado, beets, carrots
Ok – 2 things.
1. I am getting a headache every night. The book says I am detoxing and this is one of the symptoms along with more fatigue. It generally gets worse before it gets better, right? Sigh.
2. This is A LOT of food I am eating. I am stuffed every day. And, I still haven’t begun some of the other parts of the diet. Like adding seaweed and organ meats to my diet. I can barely fit it any protein at all after all the veggies. Maybe I need to cut back to 8 cups of veggies and fit in the protein? Or maybe I just need to adjust. We’ll see. One day at a time.
So far my MS symptoms from the latest attack have mostly subsided. But, there is still fatigue and some weakness. It will be interesting to see how that changes over the next few weeks.
All in all, this diet does seem easier to manage than the MS Diet by Dr. Swank. That is certainly a positive and something I am very thankful for.
